Well first off any pair is good to go as long as none of your cards are in your opponents hands. If you have a small pair and see one out might as well fold and save yourself some money. If you have AA-JJ and see one of your cards out you could still stay in hand and see if you could 2 pair, I may chase in this scenario, but not too far. Basically when u see your cards falling elsewhere its time to get out. Also 3 to a flush or 3 connected cards are also good starters to draw at. If you aren't openended or 4 to your flush by the expensive round of betting its time to get out then. The biggest mistake most people make in 7 stud is they get in and chase when thier cards are out in opponents hands. Also a lot do not even look at their opponents hands and see what kind of hand they are likely to have, and if they are still chasing as well. Theres no need to keep putting money in a pot with your big pair when somebody has 4 of a suit showing or openended showing. KNOW WHEN TO FOLD !!!!!!! Oh yea rolled up anyting is good to go also but I am sure u already knew that.

if i can get in for cheap and all my cards are live, i like to get in the pot with any pair in the whole. small pairs offer alot of implied odds if you hit a set on 4th. and since your pair is in the pocket, it is much more deceitful and more profitalbe, because it is really difficult to put a player on trips when both cards are hidden. i also like 3 suited cards, preferably with an A or K. i think that, like Teedough said, one of the most important things is to make sure your outs are live.

Shorthand is a bit different then a full table, so I'll go with full table for this:

Small pairs are junk they won't win, unless you have an Ace kicker with no other aces showing (and for no more then 1 bet), I would get rid of them.

Three no-gap connected cards in the middle are good, call a full bet, maybe two if you are reasonably certain no re raise is coming. Anything from 789 to 10JQ is a good hand to go to fourth street with is you don't see your straight outs.

Any three suited cards are pretty good for seeing 4th street for a bet, two if you don't expect a raise, get out of the way if it comes 3 bets to you (you have not committed anything more then the bring in and it's three full bets to you).

Big pairs, QQ KK AA I like with a good kicker that is live to make you two pair. For queens I would like to have at least a ten kicker for getting in to a big pot. JJ and TT are both playable for a bet, without a big (A or K) kicker be hesitant about going in for two bets or more. It helps if the kicker has a suit in common with one of the pair cards, and if it connects with them some how. i.e. Th Td Kd.

The strength of a starting hand depends a lot on the table, if people will fold unimproved on 4th or 5th street, you can open up your game and play more hands. If they are calling station, expect to need two pair or better, with some Royal cards involved.

I recommend those requirements (which are fairly tight) because 1)it's easy to tell where you stand in the hand 2)it's easier to get away from the hand when it's unimproved. You will save a lot of chips starting out this way.

First of all, are you talking about 7 stud hi, 7 stud hi/lo? It depends what game you're playing what a quality starting hand would be.

No starting is good. Because you're just gonna get outdrawn anyway. Piece of advice, stay away from stud. Try Omaha or Stick to Hold'em.
